Ingredients:
1 1/2 cups bran
1 cup buttermilk ( 1 cup milk with tbsp. lemon juice may be substituted
for buttermilk)
1/3 cup vegetable oil
1 egg
2/3 cup brown sugar
1/2 tsp. vanilla
1 cup flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 cup raisins
Directions:
Preheat oven to 375 degrees. Mix together bran
& buttermilk. Let stand.
Combine oil, egg, sugar and vanilla. Add to bran
mixture.
Sift together flour, baking powder, baking soda
and salt. Add to first mixture and stir until just blended. Add raisins
and spoon into prepared muffin pans.
Bake 15-20 minutes. Makes about 12 muffins. One
of these and a couple pieces of fruit make for a very nutritious start
to your day.
